MEAL PREP IN AN RV

 

It’s January and typically our family is setting goals regarding the new year and health and finances and the like. This year was no different; however, there was a fire inside me burning to get something… anything started for the sake of consistency and long term goal achievement.

 

While chasing that rabbit trail, I thought about an important aspect of RV Life. Is it possible to shop and prep for a whole week of meals for our family of four given the confines of our tiny Winnebago Sightseer fridge? That question led me down the path of a challenge and all of a sudden the quest for RV Meal Prep began.

 

Now, planning and prepping for me is almost a full-time job. I am one of the pickiest eaters on the planet. And given the fact that I’ve turned 40, have had kids and have no thyroid and dysfunctional parathyroid glands due to cancer when I was 19, I am frankly afraid to eat. So, I started looking at the Whole 30 plan, and then the Daniel Plan and then the once helpful Candida Diet as my inspiration.

 

The goal was to find recipes that were simple and that both the kids and I would eat. So I spent upwards of an entire day scouring for recipes that would work for my perfect plan. And then I tweaked those recipes, so that ingredients that I knew wouldn’t work for our family were swapped with better ingredients. I printed out recipes and a week-long menu I found online and then I worked on simplifying the recipes.

 

So, here’s our first week of menus- remember we’re picking and choosing from different programs, so not everything listed will be compliant with one specific plan.

 

Breakfast:

Rice Puffs and Gorilla Munch Cereal for kids

Whey Protein Smoothies

Scrambled Eggs with onion and bell pepper and turkey breakfast sausage

 

Lunches:

Pre-Prepped Salads with artisan lettuces, spinach, celery, onion, radish,

cucumber and homemade vinaigrette made with apple cider vinegar, olive oil 

and garlic

                

Leftovers from dinner from the evening prior

 

Dinners : 

Chili with Turkey and Grass Fed Ground Beef 

Turkey Taco Bowls with Cauliflower Rice 

Instant Pot Chicken Soup with Kale

Roast Beef with Cauliflower Mash

Spaghetti Squash with Turkey Sausage and Organic Marinara Sauce

Cauliflower Crust (no cheese) Pizzas with turkey Italian sausage

 

Snacks:    

Apples, Celery and Carrots with Hummus, Nuts, Cucumbers, and proportioned

Strawberries and Grapes for the kids

 

So, on Saturday with list in hand and sheer determination to succeed, we headed out to Sprouts. And we made quite the haul. Both Tom and I were getting nervous as to if it would all fit. Once we arrived at the RV and started putting things away, somehow miraculously we were able to temporarily fit everything in. Now came the prepping part.

 

Sunday, after all of our family adventures, I put the kids and Tom to bed early and quickly got to work. First, I put a whole chicken in the Instant Pot with chicken broth and salt and pepper to cook for our salads for lunch. After that was done I made the chili, so that we would have a jumpstart to our week with a complete meal to warm up in the Instant Pot. 

While everything was cooking in the Instant Pot, I sliced veggies and proportioned all of the snacks and salads for lunch. I found these Ziplock Containers for the Salads.

 

When all was said and done, we pre-prepped everything except the chicken soup, the pizzas and the roast beef. But breakfast was prepped with veggies for the scrambles and I lined up the bags with our smoothies in them. I also had prepared a bowl of snacks for the kids and a drawer of snacks in the bottom of the fridge that the kids can easily access.

And the victory stands as everything fit into our tiny fridge. And, we had no excuses for eating out. We had no excuses for eating healthy. I am so glad we took the time to work this out and now we will be able to add recipes to these and create a healthy repertoire that fits our family goals and needs.

 

This week, I also bought some bottled water to get us started. I prefer to buy the glass bottled water because I can’t stand the plastic taste in my water.
